World Health Day is just around the corner and come April 7 we’ll all be encouraged to do our bit and think about our own health, the health of others, and all the fantastic work health professionals do in our country.

Over the last 12 months we’ve all been a little more conscious about our own health, and what better way to see in World Health Day than getting in the kitchen and creating a healthy, but incredibly tasty, meal?

World Health Day always leads the discussions in our bingo rooms, from the likes of Swedish Bingo to 90-ball and there will be plenty of people thanking the many nurses up and down the country that play our games in the chat too. To help you make the most of World Health Day though, we’ve scoured the web to uncover some of the very best recipes to enjoy ahead of this special day…

Spring Celebration Salad

Spring is always a time to enjoy food, with plenty of fresh produce available in the UK. This great dish comes from Green Kitchen Stories and has been a tried and tested recipe that has always gone down a treat here at Robin Hood Bingo. Packed with fresh vegetables, including new potatoes, asparagus, and lentils, it comes with a lovely butter vinaigrette which really makes the mouth water. What You Need:

For the Salad:

  • 1 ½ lb new potatoes
  • 2 bunches asparagus
  • 100 g sugar peas
  • 175 g cooked whole lentils
  • 1 small handful of chives
  • 5 radishes

For the Butter Vinaigrette:

  • 60 g butter or ghee
  • 2 tbsp unfiltered apple cider vinegar
  • 1 spring onion
  • Salt & pepper

Vegetable Spiral Tart

If you want to create something a little more extravagant to really get into the spirit of World Health Day, then this vegetable spiral tart will certainly impress a few people. The tart takes around 30 minutes to prepare, and an hour and 20 minutes to bake, and is full of fresh ingredients and bursting with flavour. What You Need:

  • 2 green courgettes
  • 2 yellow courgettes
  • 1 aubergine
  • 3 carrots
  • 190 g flour
  • 110 g butter
  • 2 tbsp water
  • 100 g mozzarella
  • 100 g Gruyere
  • 100 g Parmesan cheese
  • 200 g sour cream
  • 1 tsp salt
  • Cracked black pepper
  • Smoked paprika
  • Nutmeg
  • Olive Oil
  • Butter

Summer Vegetable Lasagne

Jamie’s recipes always go down well with our players and this is a twist on a classic lasagne, jam-packed with some gorgeous fresh vegetables. Asparagus, mint, lemon, and peas make up the bulk of the flavour in this dish and is a relatively simple recipe to follow.
